10 Minute Brown Butter Gnocchi (GF)
I found some gluten free gnocchi (San Remo brand) begging for a sage and brown butter treatment, and it would be rude to not help it fulfil its life goal, right? And since there was a “little” butter sauce left in the pan, it makes sense to toss the veges through that sauce, I mean waste not, want not!
You will need:
- 250g GF gnocchi (or standard)
- 56g butter
- 5 large sage leaves (fresh)
- Parmesan to serve
Method
- Cook the gnocchi in a pan of salted boiling water until cooked, about 2 minutes, drain and set aside.
- Heat a sauté pan over medium heat with all of the butter in it. It’s best to use a light bottomed skillet so that you can see what color the butter is.
- Cook for about 5 minutes at which point the butter should be foaming. You can now turn the heat to medium high and continue to whisk or stir the butter, so the solids don’t stick to the bottom of the pan. Watch the butter continuously as it can suddenly burn.
- Chuck in the sage leaves, they will go crisp really quickly, then remove them.
- CAREFULLY add the gnocchi and toss until warmed through and golden.
- At this point you can also add steamed veges if you like.
- Serve with parmesan and the sage leaves on the top.
